Chocolate Chip Pumpkin Spiced Protein Oats
Last fall I was obsessed with single-serve baked oats, and after a break, I finally brought them back, but this time with a pumpkin spice twist. These are soft-baked, cozy, and topped with melty chocolate chips, making them the perfect breakfast when you want something sweet but balanced.
Ingredients (makes 1):
⅓ cup rolled oats
1 scoop vegan protein powder
1 tsp pumpkin pie spice
1 tbsp stevia (or coconut sugar)
1 tbsp pumpkin purée
½ tbsp natural peanut butter
~½ cup almond milk (adjust for consistency)
Chocolate chips for topping
How to Make It:
Preheat oven to 350°F.
Mix all ingredients except chocolate chips in a bowl.
Pour into a small ramekin or oven-safe dish.
Top with chocolate chips.
Bake for 20–22 minutes until golden and firm.
