Chocolate Chip Pumpkin Spiced Protein Oats

Last fall I was obsessed with single-serve baked oats, and after a break, I finally brought them back, but this time with a pumpkin spice twist. These are soft-baked, cozy, and topped with melty chocolate chips, making them the perfect breakfast when you want something sweet but balanced.

Chocolate Chip Pumpkin Spiced Protein Oats

Ingredients (makes 1):

  • ⅓ cup rolled oats

  • 1 scoop vegan protein powder

  • 1 tsp pumpkin pie spice

  • 1 tbsp stevia (or coconut sugar)

  • 1 tbsp pumpkin purée

  • ½ tbsp natural peanut butter

  • ~½ cup almond milk (adjust for consistency)

  • Chocolate chips for topping

How to Make It:

  1. Preheat oven to 350°F.

  2. Mix all ingredients except chocolate chips in a bowl.

  3. Pour into a small ramekin or oven-safe dish.

  4. Top with chocolate chips.

  5. Bake for 20–22 minutes until golden and firm.

Note: Macros depend on protein brand and chocolate chip amounts.

This is breakfast that feels like dessert but still leaves you feeling good, quick to throw together and always satisfying.
