Pecan Pie Blondies
Pumpkin pie always gets the spotlight in fall, but let’s not forget about the cozy, sweet magic of pecan pie. These pecan pie blondies are soft, nutty, and topped with a maple pecan glaze that caramelizes in the oven. They taste like dessert but are packed with protein to keep you satisfied.
Ingredients (makes 12):
Blondie Base
½ cup natural peanut butter
½ cup pumpkin purée
¼ cup maple syrup
¼ cup stevia
2 eggs
⅓ cup oat flour
⅔ cup vanilla vegan protein powder
1 tsp vanilla extract
½ tsp baking powder
Pinch of salt
Maple Pecan Topping
½ cup chopped pecans
2 tbsp maple syrup
1 tbsp coconut oil (or butter)
1 tsp maple extract (or vanilla)
Pinch of cinnamon and sea salt
How to Make It:
Preheat oven to 350°F.
Mix blondie base and topping ingredients in two separate bowls.
Spread the blondie batter into an 8x8 pan.
Sprinkle topping evenly on top.
Bake for 25–28 minutes, cool completely, and slice into 12.
