Chocolate Chip Pumpkin Protein Muffins

These muffins are one of my favorite things to keep around during busy weeks! They’re easy to prep, lightly sweet, and great as breakfast, a snack, or a post-run treat. Think pumpkin chocolate chip muffins, but with a little extra staying power thanks to the protein.

Chocolate Chip Pumpkin Protein Muffins

Ingredients (makes 9):

  • ¾ cup pumpkin purée

  • ½ cup natural peanut butter

  • ¼ cup maple syrup

  • ¼ cup stevia (or coconut sugar)

  • 2 eggs

  • ½ cup oat flour

  • ½ cup vegan protein powder (do not use whey)

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice

  • ½ tsp baking soda

  • Pinch of salt

  • ¼ cup chocolate chips

How to Make It:

  1. Preheat oven to 350°F and line or grease 9 muffin cups.

  2. Mix all ingredients together in a large bowl.

  3. Divide evenly between the muffin cups.

  4. Bake 18–22 minutes until golden and set.

  5. Let cool completely before removing from the tin.

Macros (per muffin): 160 cal | 9g protein | 14g carbs | 7g fat

Note: As always, macros depend on brands and chocolate used.

These are the definition of “grab and go!” Portable, soft, and full of fall flavor without being overly sweet.
