Chocolate Chip Pumpkin Protein Muffins
These muffins are one of my favorite things to keep around during busy weeks! They’re easy to prep, lightly sweet, and great as breakfast, a snack, or a post-run treat. Think pumpkin chocolate chip muffins, but with a little extra staying power thanks to the protein.
Ingredients (makes 9):
¾ cup pumpkin purée
½ cup natural peanut butter
¼ cup maple syrup
¼ cup stevia (or coconut sugar)
2 eggs
½ cup oat flour
½ cup vegan protein powder (do not use whey)
1 tsp vanilla extract
1 tsp pumpkin pie spice
½ tsp baking soda
Pinch of salt
¼ cup chocolate chips
How to Make It:
Preheat oven to 350°F and line or grease 9 muffin cups.
Mix all ingredients together in a large bowl.
Divide evenly between the muffin cups.
Bake 18–22 minutes until golden and set.
Let cool completely before removing from the tin.
Macros (per muffin): 160 cal | 9g protein | 14g carbs | 7g fat
