Sugar Cookie Protein Bars
ALRIGHTY! I know it’s Halloween, but I couldn't wait a second longer to start holiday baking. These sugar cookie bars are soft, fluffy, perfectly sweet, and secretly packed with protein, think classic sugar cookies turned into cozy cake bars. They’re simple to make and the perfect way to kick off the season.
You’re going to want to make these.
Ingredients (makes 12):
½ cup (128g) natural peanut butter
2 tbsp (30g) pumpkin purée
¼ cup (60ml) maple syrup (or honey)
¼ cup (48g) stevia (or coconut sugar)
2 large eggs
1 tsp (5ml) vanilla extract
½ tsp (2ml) almond extract
1 cup (120g) flour of choice
½ cup (48g) vanilla protein powder (vegan recommended)
1½ tsp (6g) baking powder
Pinch of salt
White chocolate chips and sprinkles to taste
Optional: 1–2 tbsp almond milk if batter feels thick
How to Make It:
Preheat oven to 350°F and line an 8x8 baking pan.
Mix all wet ingredients in a bowl until smooth.
Add dry ingredients and stir until fully combined.
Fold in sprinkles and chocolate chips.
Spread evenly into the prepared pan.
Bake for 20–22 minutes until golden and slightly springy.
Let cool before slicing into 12 bars.
