Frosted Sugar Cookie Banana Bread
This recipe has been a staple for a while, but this holiday version might just be my favorite yet. Think: cozy banana bread with a festive sugar cookie twist, topped with a light glaze and colorful sprinkles. Perfect for gifting, sharing, or just enjoying a slice on a quiet afternoon.
Ingredients (makes 14):
3 bananas (300g), mashed
3 tbsp honey or maple syrup (45g)
3 tbsp stevia or sugar (45g)
⅓ cup unsweetened almond milk (80ml)
3 large eggs
2 tsp baking powder (8g)
½ tsp vanilla extract (2ml)
½ tsp almond extract (2ml, optional)
1 cup oat flour (100g, or all-purpose)
3 scoops vanilla vegan protein powder (90g)
Pinch of salt (1g)
2 tbsp sprinkles (any kind you like)
Optional Glaze:
1 cup powdered monk fruit sugar
Unsweetened almond milk to thin
How to Make It:
Preheat oven to 375°F and spray or line a loaf pan.
Combine all wet ingredients and mashed banana.
Stir in dry ingredients until batter is smooth.
Fold in sprinkles and pour into loaf pan.
Bake 45–50 minutes until a knife comes out clean.
Let cool for 15 minutes before drizzling with glaze (if using).
Slice into 14 pieces.
