Protein Cookie Dough Christmas Bark

Okay… this one might be the easiest and most festive thing I’ve made all season. I grew up absolutely loving Christmas bark, and this little protein cookie dough twist is honestly heavenly. No baking. One bowl. Minimal effort. Maximum holiday joy.

This is also one of those recipes where you can truly make it your own, different protein powders, different chocolates, different toppings. I went with sprinkles and crushed peppermint chocolate, but M&M’s, crushed candy canes, or chopped chocolate would all be amazing.

Basically: there’s no wrong way to do this.

Protein Cookie Dough Bark

What You’ll Need (Makes 12 Brownies)

  • ¾ cup natural peanut butter

  • ½ cup protein powder

  • ¼ cup stevia or sweetener of choice

  • 1 tsp vanilla extract

  • 4 tbsp honey

  • Chocolate chips for the dough (measure with your heart)

  • Water, as needed to bind

  • Melted chocolate for the top (about ¼–⅓ cup)

  • Toppings of choice (sprinkles, crushed peppermint, chopped chocolate, etc.)

How to Make Them

  1. In one bowl, mix everything together until a thick cookie dough forms. Add water a little at a time if needed.

  2. Press the dough into a lined pan.

  3. Spread melted chocolate evenly over the top.

  4. Sprinkle with your favorite toppings.

  5. Chill in the fridge or freezer until firm, about 1 hour.

  6. Break into pieces and enjoy.

Macros

No macros for this one because it totally depends on the protein powder, chocolate, toppings, and how big you make the pieces. But it is protein-packed, super festive, and the perfect treat to keep in the fridge throughout the holidays.
