Lindt Truffle Peanut Butter Cookie Cups
If you love a classic peanut butter cookie but also believe dessert should feel a little extra sometimes… these are for you.
These Lindt Truffle PB Cookie Cups are easily in my top three favorite twists on a peanut butter cookie ever. Think warm, soft peanut butter cookie cups with a Lindt truffle melted right into the center. A little indulgent? Yes. Completely worth it? Also yes.
What makes these especially fun is that you can totally make them your own. I tested a few different truffle flavors, hot chocolate, peppermint cookie, snickerdoodle, and even Ghirardelli Duba, and every single one worked. It’s basically a choose-your-own holiday adventure situation, and I’m not mad about it.
These are perfect for cookie swaps, holiday platters, or when you just want something cozy and nostalgic without making an entire batch of cookies.
What You’ll Need (Makes 12)
1 cup natural peanut butter
1 cup stevia (you can absolutely use regular sugar if you prefer)
1 egg
1 tsp vanilla extract
¼ cup Ghost Vegan Protein (or any vanilla vegan protein powder)
12 Lindt truffles (mix and match flavors!)
1–2 tbsp melted chocolate chips (this acts as the “glue”)
How to Make Them
Preheat your oven to 350°F and lightly grease a mini muffin tin.
In a bowl, mix together the peanut butter, sweetener, egg, vanilla, and protein powder until fully combined.
Roll the dough into 12 evenly sized balls and place one into each muffin well.
Bake for 8 minutes.
While the cookies are still warm, use the back of a teaspoon to gently press an indent into the center of each cookie cup.
Add a small dab of melted chocolate into each indent, then place a Lindt truffle on top.
Immediately transfer the pan to the freezer for 10–20 minutes. This helps the truffles keep their shape and set properly.
Let them sit at room temperature for a few minutes before serving. And then ENJOY!!
