Peppermint Protein Brownies
If there’s one thing we’ll never skip in our house, it’s brownies. And when the holidays roll around, nothing feels more Christmas than a chocolate + peppermint combo.
These Peppermint Protein Brownies are fudgy, rich, and festive without being overly sweet. They’re the kind of dessert you make leading up to Christmas, stash in the fridge, and casually grab all week long. Cozy, nostalgic, and just a little elevated.
They’re also super simple, one bowl, no mixer, and easy to customize depending on what you have on hand.
What You’ll Need (Makes 12 Brownies)
½ cup (120g) natural peanut butter
¼ cup (60ml) maple syrup or honey
¼ cup (50g) stevia or coconut sugar
2 eggs (about 100g)
1 tsp vanilla extract
½ tsp peppermint extract
½ cup (48g) chocolate vegan protein powder
¼ cup (25g) cocoa powder
½ cup (60g) oat flour or all-purpose flour
½ tsp baking powder
Pinch of salt
¼ cup (40g) chopped peppermint chocolate or peppermint Hershey Kisses
Optional: crushed candy cane or extra peppermint chocolate for topping
How to Make Them
Preheat your oven to 350°F and line an 8×8 pan with parchment paper.
In one bowl, mix all ingredients together except the peppermint chocolate until smooth.
Gently fold in the chopped peppermint chocolate.
Spread the batter evenly into the prepared pan.
Bake for 18–22 minutes, until the edges are set but the center is still slightly soft.
Let cool completely before slicing (this helps them stay fudgy).
