Chocolate Peppermint Protein Muffins
I am currently baking my way through the holiday season one recipe at a time! AND these chocolate peppermint muffins are officially in the weekly rotation.
Ryan actually came up with this flavor combo and it just works. Think rich, fluffy, peppermint-y (but not like toothpaste LOL), and packed with both chocolate chips and chopped peppermint squares.
They're festive without being overly sweet, which makes them the perfect pick if you've had one too many sugar cookies but still want a treat that hits the spot.
Ingredients (makes 8 muffins):
1 cup (120g) all-purpose flour
½ cup (40g) Steel Vegan Chocolate Peppermint Protein
¼ cup (25g) cocoa powder
1 tsp baking powder
½ tsp baking soda
Pinch of salt
2 eggs
½ cup + 2 tbsp (140g) pumpkin purée
¼ cup (48g) stevia
3 tbsp (45ml) almond milk
1 tsp vanilla extract
¼ tsp peppermint extract
½ cup (90g) chocolate chips
2 chopped Ghirardelli Peppermint Squares
How to Make It:
Preheat oven to 350°F.
Mix all ingredients together in a bowl until smooth.
Fold in chocolate chips and chopped peppermint squares.
Scoop evenly into 8 lined or greased muffin cups.
Bake for 16–20 minutes, until tops are set and fluffy.
Let cool slightly before removing from pan.

180 calories | 9g protein | 24g carbs | 7g fat
