Giant Protein Sugar Cookie for One
As much as I love baking full batches of sweet treats, sometimes I just want one sweet treat without the leftovers sitting on the counter. That’s why single-serve desserts will always have a place in my kitchen, and this giant protein sugar cookie is a new favorite. It’s soft, sweet, and packed with vanilla-almond flavor, plus a few white chocolate chips and sprinkles to give it that classic sugar cookie vibe.
Ingredients (makes 1 large cookie):
1 tbsp (32g) natural peanut butter
2 tbsp (16g) vanilla vegan protein powder
2 tbsp (16g) almond flour
1 tbsp (12g) stevia or coconut sugar
1 tbsp (15g) white chocolate chips
1–2 tsp sprinkles
¼ tsp vanilla extract
¼ tsp almond extract
¼ tsp baking soda
Splash of almond milk as needed for dough consistency
How to Make It:
Preheat oven to 350°F.
Mix all ingredients in a bowl until a thick cookie dough forms.
Shape into a cookie on a lined baking sheet.
Bake for 8–10 minutes, until edges are set and center is still soft.
Let cool slightly before eating to keep that gooey center.
