Giant Protein Sugar Cookie for One

As much as I love baking full batches of sweet treats, sometimes I just want one sweet treat without the leftovers sitting on the counter. That’s why single-serve desserts will always have a place in my kitchen, and this giant protein sugar cookie is a new favorite. It’s soft, sweet, and packed with vanilla-almond flavor, plus a few white chocolate chips and sprinkles to give it that classic sugar cookie vibe.

Giant Protein Sugar Cookie for One

Ingredients (makes 1 large cookie):

  • 1 tbsp (32g) natural peanut butter

  • 2 tbsp (16g) vanilla vegan protein powder

  • 2 tbsp (16g) almond flour

  • 1 tbsp (12g) stevia or coconut sugar

  • 1 tbsp (15g) white chocolate chips

  • 1–2 tsp sprinkles

  • ¼ tsp vanilla extract

  • ¼ tsp almond extract

  • ¼ tsp baking soda

  • Splash of almond milk as needed for dough consistency

How to Make It:

  1. Preheat oven to 350°F.

  2. Mix all ingredients in a bowl until a thick cookie dough forms.

  3. Shape into a cookie on a lined baking sheet.

  4. Bake for 8–10 minutes, until edges are set and center is still soft.

  5. Let cool slightly before eating to keep that gooey center.
