Chocolate Chip Protein Pumpkin Cookies
When the pumpkin cravings hit, these are the easiest cookies to whip up. They’re soft, lightly sweet, and packed with chocolate chips, the perfect simple treat for early fall or whenever you want something cozy.
Ingredients (makes 12):
1 cup pumpkin purée
½ cup natural peanut butter
1 scoop vanilla vegan protein powder
¾ cup oat flour
⅓ cup coconut sugar (or stevia)
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp pumpkin pie spice (or cinnamon + nutmeg)
½ tsp baking soda
Pinch of salt
¼ cup chocolate chips
How to Make It:
Preheat oven to 350°F.
Mix everything into a thick dough.
Scoop into 12 cookies and flatten slightly.
Bake for 10–12 minutes.
