Chocolate Chip Protein Pumpkin Cookies

Ingredients (makes 12):

  • 1 cup pumpkin purée

  • ½ cup natural peanut butter

  • 1 scoop vanilla vegan protein powder

  • ¾ cup oat flour

  • ⅓ cup coconut sugar (or stevia)

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice (or cinnamon + nutmeg)

  • ½ tsp baking soda

  • Pinch of salt

  • ¼ cup chocolate chips

How to Make It:

  1. Preheat oven to 350°F.

  2. Mix everything into a thick dough.

  3. Scoop into 12 cookies and flatten slightly.

  4. Bake for 10–12 minutes.

  5. Cool before serving.
