Protein Brownie Bites
Remember those classic Costco brownie bites we all grew up with? Addicting, chocolatey, and so nostalgic. Ryan and I were reminiscing about them and decided I had to recreate something similar, and these protein brownie bites are the result.
They’re soft, fudgy, and just as addicting, but made with more wholesome ingredients and a boost of protein. Perfect for a sweet snack or dessert that still feels balanced.
Ingredients (makes 18):
2 tbsp natural peanut butter
½ cup pumpkin purée
¼ cup unsweetened applesauce
3 tbsp maple syrup (or honey)
2 tbsp stevia (or coconut sugar)
2 eggs
⅓ cup cocoa powder
½ cup vegan protein powder (vanilla or chocolate)
¼ cup oat flour (or any flour)
1 tsp baking powder
Pinch of salt
Optional: 2 tbsp mini chocolate chips
How to Make It:
Preheat oven to 350°F and grease or line a mini muffin tin.
Mix all ingredients in a bowl until smooth and combined.
Scoop evenly into 18 mini muffin slots.
Bake for 10–12 minutes for soft centers, or 14–15 minutes for a cakier texture.
Let cool in the tin for 20 minutes before removing.
