Biscoff Snickerdoodle Thumbprint Cookies
OKAY! We are officially kicking off 12 Days of Christmas Cookies and I could not be more excited. This idea came from Ryan (yes, he’s the creative cookie king now 🍪), and naturally I had to start strong with a mashup of two of the coziest flavors ever: Biscoff + Snickerdoodle.
These turned out SO soft, cinnamon-y, sweet, and nostalgic, and the little Biscoff thumbprint in the center with flaky sea salt? UNREAL. Like… you need to make them immediately.
Ingredients (makes 14):
¾ cup (90g) all-purpose flour
¼ cup (30g) vanilla vegan protein
¾ tsp cream of tartar
½ tsp baking soda
2 tsp cinnamon
⅛ tsp salt
3 tbsp (54g) Biscoff cookie butter
1 egg
2 tsp vanilla
½ cup (96g) stevia (or regular sugar)
Cinnamon coating:
¼ cup (48g) stevia (or sugar)
1 tbsp (6g) cinnamon
For the thumbprint center:
~¼ tsp (~1.3g) Biscoff per cookie
Flaky sea salt
How to Make Them:
Mix all cookie ingredients in one bowl until a dough forms.
Chill the dough in the fridge for 30 minutes.
Roll dough into 14 balls, then coat each one in the cinnamon–sugar mixture.
Place on a lined baking sheet and bake at 350°F for 9–11 minutes until just set.
Immediately press a thumbprint into each warm cookie and fill with ~¼ tsp Biscoff.
Sprinkle with flaky sea salt and let cool so they stay soft and chewy.

These are so cozy, SO GOOD, and absolutely addicting. I already know I’ll be making them again before the 12 days are even over. LOL!
